Cheddar Breakfast Sandwiches with Maple Fruit Sauce

A little sweet, a little sour, a lot of yum. This one will produce wide eyes around the breakfast table!

Servings: 10
Prep and cook time: 25 to 30 minutes

Ingredients:

Sandwiches
20 slices sourdough bread
1/2 cup butter (1/4 stick)
1 pound sharp Cheddar cheese, thinly sliced
12 eggs
2 cups whole milk
3 tablespoons vanilla extract

Sauce
1 cup pure maple syrup
1/4 cup dried cranberries
1/4 cup thinly sliced apricots (fresh or canned)
1/4 cup finely chopped walnuts
1/4 cup golden raisins

 

Method:

Butter half the bread slices and place the cheese on top of half of them, dividing evenly. Top with the other slice of bread to form a sandwich.

In a large shallow bowl, whisk together the eggs, milk, and vanilla until smooth. Soak the sandwiches in the egg mixture for at least 45 minutes and drain. Heat a medium non-stick skillet and grill the sandwiches over medium heat until the cheese is melted and the bread is golden brown.

Meanwhile, in a small non-stick saucepan, heat all of the sauce ingredients, stirring until well combined. Pour over the sandwiches and serve.

Note: To eat-and-run with these, open up the sandwiches and spread the sauce inside.
