Fig and Plum Cream Pie

Fresh plums, figs, and lemons create an irresistible pie -- just don't be shy with the whipped cream!

Servings: 6
Prep and cook time: 15 minutes Bake: 1 hour

Ingredients:

1 cup milk
1/3 cup heavy cream
3 eggs
2 teaspoons vanilla extract
2 tablespoons light rum
1/2 cup sugar plus 4 tablespoons
2 teaspoons lemon zest
3/4 cup all-purpose flour
1/8 teaspoon salt
10 ripe plums, quartered and seeded
8 fresh figs, quartered 

Method:

Preheat the oven to 375 degrees.

In a food processor, whirl together the milk, cream, eggs, vanilla, and rum. In a small bowl, mix together 1/3 cup of the sugar, 1 teaspoon of the lemon zest, the flour, and the salt. Add to the food processor and whirl until a smooth batter forms.

Pour 1-1/2 cups of the batter into a 9-inch pie pan coated with non-stick spray. Arrange the plums and figs on the top in a single layer. Sprinkle with the remaining lemon zest and gently pour the rest of the batter over the fruit. Bake for 15 minutes and then sprinkle the remaining sugar over the top and return to the oven for another 45 minutes or until the crust is set and the top is golden brown and set.
