Poached Cherries
Use these cherries in any number of recipes or simply serve over freshly cut fruits garnished with mint.
Servings: 2-1/2 cups
Ingredients:
1 lemon 1 orange 1-3/4 cups water 2/3 cup sugar 1 teaspoon vanilla extract 1 pound fresh sweet cherries, rinsed and pitted
Method:
Peel half the lemon and half the orange with a vegetable peeler. In a saucepan, bring the water, sugar, citrus peel and vanilla to a boil, stirring to dissolve the sugar. Add the cherries and simmer until they're soft but not falling apart, about 10 minutes. Skim any foam from the surface. Let cool and then refrigerate. Strain the poaching liquid before serving.
