Toasted Fruit Salsa with Frozen Yogurt
A vanilla frozen yogurt work nicely with most fruits, but you can get creative and coordinate different kinds of flavors.
Servings: 4
Prep and cook time: 15 minutes
Ingredients:
1 cup sugar 1-1/2 cups fresh diced pineapple 1 cup diced mango 1 pint low fat frozen yogurt of choice
Method:
Heat a non-stick saut‚ pan over medium heat. When hot add the sugar to the dry pan and cook, stirring and patting out lumps until the sugar has melted and is the color of iced tea. Remove immediately from the heat, stir in fruit and let stand until cool.
Place the frozen yogurt in a medium bowl. Add the fruit and swirl through the yogurt. Place in serving bowls immediately. Bowls may be frozen until ready to serve.
