Tomato-Basil Salad Dressing
The succulent flavors of tomatoes, basil, garlic and other fresh herbs are whirled together in a heavenly blend.
Servings: Servings: 1-1/2 cups
Ingredients:
1-1/2 cups chopped red ripe plum or Roma tomatoes; seeded 2 tablespoons sweet balsamic vinegar 2 tablespoons olive oil 1 clove garlic 2 tablespoons coarsely chopped fresh basil leaves 1 tablespoon fresh oregano leaves 1 teaspoon fresh thyme leaves Salt and pepper
Method:
In a blender or food processor, whirl together the tomatoes,
vinegar, olive oil, and garlic until smooth. Add the basil, oregano,
and thyme and whirl again until the herbs are chopped and incorporated.
Season with salt and pepper.
Note: brush onto slices of bread and layer with a slice of
Mozzarella cheese. Place on a non-stick cookie sheet and bake at 350
degrees for 10 minutes or until the cheese is melted and the bread is
toasty.
