White Bean and Tomato Saute

Here is a nice opportunity to use the last of the farm market basil or the bunch growing in your own kitchen garden.

Servings: 6

Ingredients:

2 tablespoons olive oil
2 cans (19-ounce) Italian white beans (cannellini)
1 large onion, finely chopped
4 garlic cloves, minced
1 small bunch fresh basil, coarsely chopped
2 large tomatoes, coarsely chopped
Block Parmesan cheese

Method:

In a medium non-stick skillet, heat the olive oil. Saut‚ the onion and garlic until softened. Add the beans with their liquid and cook slowly over medium-low heat for about 15 minutes. Add the basil and tomato to the beans and cook for another three minutes or so. Salt and pepper to taste.

To serve, place the beans in a serving bowl. Add the utensils and pass around. As host, get up from the table and grate the cheese over each guest's plate.
