Roasted Pepper and Goat Cheese Pizza

With sweet caramelized onion and tangy goat cheese, this pizza will have everyone asking for seconds.

Servings: 1 Pizza
Prep and cook time: 20 minutes

Ingredients:

2 tablespoons olive oil
1 cup thinly sliced yellow onion
2 cloves garlic, minced
1 prepared 10-inch (or so) pizza crust
3/4 cup prepared tomato sauce
1 cup crumbled goat cheese
1 cup julienne roasted red bell peppers
1/2 cup whole basil leaves

Method:

In a non-stick skillet, heat the olive oil and add the onions, sauteing over medium-high heat with the lid on for 2 minutes and then for 8 minutes with the lid off or until the onion caramelizes. Toss in the garlic and cook another 2 minutes.

Place the pizza on a non-stick pizza pan. Spread the sauce over the crust to within 1/2-inch of the edge. Top with onion and garlic mixture and then with the goat cheese. Spread the peppers all around the pie and add the basil leaves.

Bake for 10 minutes or until the crust is golden brown. Cut into wedges and serve.
