Banana Sour Cream Waffles

These waffles are light in texture but intense in flavor. Serve maple syrup as a wonderful complement to the fruit.

Servings: 6-8 waffles
Prep and cook time: 20 minutes

Ingredients:

1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, separated
1 cup sour cream
1/4 cup milk
1/4 cup butter, melted
1 ripe banana, mashed

Method:

Sift together the dry ingredients and set aside. Beat the egg yolks until well combined. Whip the egg whites until light peaks form. In a bowl, mix together the egg yolks, sour cream, milk, butter, and banana. Add to the flour mixture, mixing well. Fold in the whipped egg white.

Pour the batter into a greased and heated non-stick waffle iron and cook until golden, or according to waffle iron directions.
