Apple Croissant French Toast
Croissants are delightful as a French toast bread because of their flaky texture and circular appearance. A variation to this recipe would be to lather cream cheese onto the inside of each croissant after toasting in the skillet.

Prep and cook time: 22 minutes
Ingredients:
3/4 cup milk 3 eggs 1 teaspoon vanilla extract 1/4 cup biscuit mix 6 croissants, split in half 2 cups (canned) apple pie filling 1 teaspoon cinnamon 1/2 teaspoon nutmeg
Method:
In a large bowl, whisk together the milk, eggs, vanilla, and biscuit mix until well blended. Soak the croissants in the batter, about 12 minutes, turning once.
Meanwhile, warm the apple pie filling in a small saucepan with a non-stick coating. Stir in the cinnamon and nutmeg.
When the croissants are about soaked through, heat a large skillet with non-stick coating over medium-high. Cook the croissants on each side until browned and puffy. Place a croissant on an individual serving plate and add some of the pie filling between the layers and then spilling out from the croissant. Garnish with fresh fruit and serve.
