Warm Citrus Dressing with Spinach
This salad can be a prelude to a meal or a side dish. Or for an instant lunch, add cheese and crusty bread.
Servings: 4
Prep and cook time: 15 minutes
Ingredients:
Spinach 3-1/2 cups of washed and dried spinach 1 cup upland or other watercress Sections from 1 large peeled orange 1/2 cup sliced almonds
Dressing 1/4 cup apple cider vinegar 2 tablespoons white wine vinegar 1 tablespoon olive oil 1 tablespoon honey 2 tablespoons fresh-squeezed orange juice Salt and pepper
Method:
In a large bowl, combine the spinach with the watercress, orange sections and almonds.
In a small saucepan coated, stir the dressing ingredients together, seasoning with salt and pepper to taste. Serve immediately over the spinach.
