Pan Spinach
Fresh spinach is cooked in garlic, white wine, and olive oil, adding flavor but maintaining its nutritious value.
Servings: 4
Prep and cook time: 15 minutes
Ingredients:
2 tablespoons olive oil 1 large garlic clove, minced 2 cups trimmed and coarsely fresh spinach leaves 1/4 cup white wine Salt
Method:
In a large non-stick skillet, heat the olive oil and saut‚ the garlic for 1 minute over medium heat. Add the spinach and the white wine and cook, turning the spinach often with tongs. Cook about 3 minutes or until the liquid almost evaporates. Serve immediately with a seasoning of salt.
Note: Choose the lighter, flatter-leaf spinach for this dish as opposed to the thick, coarse curly spinach.
